i've been meaning to try an egyption-style falafel recipe, apparently they use braod beans rathjer than chickpeas. Dried broad beans are a pain in the arse though, as the skins are a lot thicker than the skins of chickpeas, so you either have to shell them twice, as it were, or pick dozens of tough...
